Planning ahead for Saturday lunch

Leek & Potato Soup with frozen leeks

Fed up with sandwiches every lunchtime, I decided to make some tasty soup. This one is made from frozen leeks. It took me a relaxing hour to make, and that included having a shower and drying my hair whilst the soup simmered.

So it’s 10.15am on Saturday morning.

Get your ingredients : potatoes, an onion, butter, frozen leeks, seasoning, 1.5 pints stock and 275ml milk.

Chop the onion and put it in the pan with a good blob of butter, add the frozen leeks and saute gently for 15 mins with the lid on. Whilst that’s doing, peel and chop the potatoes and bung them in the pan, stir it all up and put the lid on.

Whilst that is simmering, you can make up the stock. I used a chicken oxo and some vegetable boullion powder. Boil the kettle and make 1.5 pints of stock.

So once it’s simmered for 15 minutes, you can add the stock and some seasoning.

Next add 275ml of milk and give it a good stir. Put the lid on and bring it to a simmer.

Simmer with the lid on for 20 minutes.

Have a shower?

After 20 minutes or so, take it off the heat and blend (I used a hand blender). Check the seasoning is ok for your taste.

Reheat what you need when you are ready, and freeze what you don’t eat.

Job done.
